Right before Christmas, I started hearing all about the Instant Pot and how it was the newest craze. I don’t know about you but the various functions and the simple fact that it cooked meals quicker, instantly intrigued me. I did a bit of research and then added it to my Christmas List. I didn’t have a particular pot that I wanted… I didn’t do enough research to know the big differences or read the reviews (I just knew I wanted one). My aunt did a bit more research and based off of reviews she got me the Crockpot Express for Christmas… and so far I love it!
I was a bit scared to use the machine at first, there are just so many buttons and functions… it is hard to know where to begin. So I went straight to Pinterest and began finding different recipes to cook. There are so many blogs and recipes that walk you step by step through the process, which makes your first few times using the cooker easy and not so scary. Recently I found a variety of Facebook groups that have tips and recipes as well. No matter what… I would say find one recipe and just dive right in. Slowly you will begin to learn how to use your pot. Aside from being able to cook dinner much quicker, I also love my CPE because I am only dirtying one dish. Who doesn’t love a quick meal and even quicker cleanup?
Since going through Pinterest and Facebook can be overwhelming for some I have decided to share a few of my favorite recipes that I have made in my first week using my CPE. Whether you have an Instant Pot or a CPR you can use the recipes interchangeably.
Instant Pot Recipes
My first meal was Chicken and Wild Rice soup. I always love getting this soup at Panera so we decided to make our own Panera lunch and had soup and sandwich. Normally Eric’s panini is the hit when we serve it to a crowd and although everyone loved his panini, the soup was just as big of a hit. I used the recipe from Everday Jenny. If you want a quick, creamy, and delicious soup, this is your go to.
Another soup that we made was Chicken Tortilla Soup. I love the CPE for making soup because you get the same flavor in 30 minutes of cooking as you would for a soup that cooked all day. For the Tortilla Soup, I used a recipe from Kitschen Cat’s blog. This recipe was very simple to make and once again, delicious. We topped our soup with crunched tortilla chips, cheese, and avocado slices.
Another favorite CPE recipe in our house is Shrimp Paella. This recipe cooked for a total of 15 minutes and had delicious flavor. Before making the recipe I had read the reviews so I decided to add a fourth of a cup of extra rice. Everything else we left the same and the flavor was amazing! Dessert is my all time favorite thing. I could skip dinner every night and just eat something sweet. When I saw the Instant Pot Lava Cakes on Adventures of a Nurse’s blog I knew I had to make them. Now, mine did not look nearly as pretty as hers did, but when they taste amazing, do looks really matter? If you love sweets, head on over to Adventures of a Nurse‘s blog and make this ASAP.
If you don’t have an Instant Pot I would recommend getting one. It has made cooking during the week so much easier and everything I have made has had such great flavor. Best of all, Amazon can have it to your door in 2 days.
